If people are willing to queue for over 1½ hours for something, there’s generally a very good reason for it. In this case, it’s super smooth ice cream made using LN2 (Liquid Nitrogen). Very Heston Blumenthal.
Noticing a rather large queue at a small kiosk in the gourmet emporium at Pavilion (otherwise known as the food hall) we went to investigate. Space-age mixers using LN2 to speed freeze the ice cream covered the OMG! stand in liquid nitrogen mist, I just had to have one.
We queued for over an hour but had to give up due to a prior engagement, we did, however, return two days later to try again. After a 45 minute wait, we received our very special ice cream. I had chosen the ice cream-based, cream cheese flavour with strawberry sauce and my partner the same base with chocolate flavour. We both agreed that the ‘cheesecake-style’ ice cream was far better than the chocolate, but both were so smooth and creamy thanks to the super-fast freezing process of the LN2 (no ice crystals).
Although rather expensive for ice cream, the experience of watching the creation of your custom-made ice cream while liquid nitrogen mist pours out from the mixing bowl is very sci-fi. This might be a fad, but it is the smoothest and creamiest I have ever tasted. Just expect around 30-45 minutes from ordering to tasting on weekdays and minimum of 1 hour during weekends and holidays.
